Le Chêne Marchand is a very well known named place in the commune of Bué.

A blend of several plots within the same named place
Upper Oxfordian limestone locally known as “caillottes”
Shallow, well-drained soil
The vines are planted at mid-slope at an altitude of 240 to 260 metres

The vines
Planted to Sauvignon Blanc grapes
Planting density: 6,800 to 8,800 vines/hectare depending on the age of the plots

The entire bunches of grapes are fed into pneumatic presses via a conveyor belt
Cold settling
Fermentation of the musts in temperature-controlled vats for approximately 30 days and 15% in oak barrels of 600 liters
Lees ageing for 10 months
Racked in July 2020, then matured on fine lees for another 9 months
Filtered and bottled in April 2021

Tasting notes – 2019 vintage
Visual: bright golden yellow
Nose: aromas of acacia flowers and almond paste, then slightly spicy when oxygenated with a hint of white pepper and ginger bread.  Persistent chalky notes in the finish mingle with candied orange peel
Palate: rich and round mouthfeel with flavors of chestnut cream and mirabelle plum. Nice balance slightly sugary but enhanced by delicate bitterness carrying to a mineral finish

Food pairings: sea food poached in thaï-style broth, noble fish like turbot, John Dory, monkfish and sea bass
Serving temperature: 8 to 10°C
Ageing potential: 8 to 10 years
