Terroir
A blend of several plots of our Estate. Plots of Oxfordian limestones, locally known as 
“Caillottes” and Kimmeridgian marls

Growing methods
Howing or superficial tilling
The pruning is short, single Guyot
De-budding at spring
Practice of integrated crop protection

The vines
Grape variety Pinot Noir, average age of the vines 40 years
Planting density from 6,800 to 8,500 vines/hectare

Vinification
Harvest hand-picked and brought to the winery in 40-kg crates
Table-sorted and completely destemmed 
Tanks with automatic punching of the cap
Maceration for about 30 days at controlled temperature
Pumping-over and punching of the cap based on daily tastings 
Free-run juice and press-juice blended on devatting 
100% wood ageing: Burgundy barrels (228l) and 600l oak vats (demi-muids). Blended in October 2019, then 10 other months aged in vats. Bottled in July 2020.  

Tasting notes - 2018 vintage 
Visual: dark garnet red
Nose: complex and elegant, uniting floral notes (violet flower) and red fruit (cherry, raspberry) with a hint of dark chocolate. Aromas of blueberry pie complete the rich and powerful nose    
Palate: smooth and round, confirming the fruity and floral flavors, velvety mouthfeel provided by deep and generous tannins, elegant hint of bitterness in the finish: all the delicacy of a Pinot Noir on limestone soil
Ageing potential: 3 - 4 years 
Serving temperature: 12 - 14°
Food pairing: Easy to combine with white and red meat, fried liver, red tuna...and nice to drink even without food
